  • 1 lb. baby potatoes
  • 4 boneless skinless chicken breasts
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella
  • ½ cup shredded Italian blend cheese
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 teaspoons dried parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Season both sides of the chicken breasts with kosher salt and black pepper, then place them in a single layer in a casserole dish. Arrange the baby potatoes around the chicken.
  2. In a large skillet, melt the butter over low heat. Add the minced garlic and cook until fragrant, about 1 minute. Remove from heat and let cool for 5 minutes.
  3. Pour the garlic butter over the chicken and potatoes in the casserole dish. Sprinkle half of the red pepper flakes and half of the dried parsley over the top.
  4. Bake in the preheated oven for 20-22 minutes, or until the chicken is almost cooked through.
  5. Sprinkle the shredded mozzarella and Italian blend cheese evenly over the chicken and potatoes. Top with the remaining red pepper flakes and dried parsley. Bake for an additional 3-5 minutes, or until the cheese is melted and bubbly. For a golden brown finish, turn on the broiler for the last minute, keeping a close eye on it to avoid burning.
