6 cups Fruity Pebbles
10 ounces mini marshmallows
4 tablespoons unsalted butter or vegan baking stick, melted
1/2 teaspoon pure vanilla extract
Pinch of kosher salt
1/2 cup plus 2 tablespoons white chocolate chips (reserve 2 tablespoons for topping)
1/2 cup plus 2 tablespoons confectioners' sugar
1 tablespoon orange juice (no pulp)
2 frozen raspberries
Instructions
Grease a 9×13 inch pan and set it aside.
Place the butter in a heat-safe bowl and microwave in 20-second increments until fully melted.
Whisk the pinch of kosher salt and 1/2 teaspoon of vanilla extract into the melted butter.
Add the mini marshmallows to the butter mixture. Use a spatula to coat them evenly.
Microwave the bowl in 40-second increments, whisking after each interval, until the marshmallows are melted and fully combined with the butter.
Pour the Fruity Pebbles and 1/2 cup of white chocolate chips into the melted marshmallow mixture. Stir with a spatula until the cereal is fully coated.
Press the mixture into the greased 9×13 inch pan. Set it aside to cool.
In a small bowl, whisk together 1/2 cup plus 2 tablespoons of confectioners' sugar, 1 tablespoon of orange juice, and 2 frozen raspberries. Mash the raspberries thoroughly to mix, creating a pink drizzle with raspberry flecks.
Using a small spoon, drizzle the pink icing over the treats. Sprinkle the remaining 2 tablespoons of white chocolate chips on top if desired. Allow the treats to sit for one hour until solidified.
Cut the treats into squares or rectangles and enjoy!
