Fajita Chicken Casserole is a hearty and flavorful dish that combines tender shredded chicken, zesty fajita seasoning, and creamy ingredients, all baked together with melted cheese on top.   • 1 cup sour cream
  • 1 (8-ounce) shredded Mexican blend cheese (about 2 cups)
  • 1 (10.5-ounce) can cream of chicken soup
  • 4 cups shredded cooked chicken (about 3 large breasts)
  • 1 (10-ounce) can diced tomatoes with chilies, undrained
  • 2 cups instant rice
  • 1 cup frozen diced onion and bell pepper blend
  • 1 1/2 cups chicken broth
  • 1 (1.12-ounce) packet fajita seasoning

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large bowl, mix together the shredded chicken, uncooked instant rice, cream of chicken soup, sour cream, frozen diced onion and bell pepper blend, undrained diced tomatoes with chilies, chicken broth, fajita seasoning, and half of the shredded Mexican blend cheese.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Bake in the preheated oven for about 25 minutes.
  5. Remove from the oven, sprinkle the remaining cheese on top, and return to the oven. Continue baking until the cheese is melted and bubbly, about 5-7 more minutes.
  6. Take the casserole out of the oven and let it sit for a few minutes before serving.
