  • 2 tablespoons brown sugar
  • 64 ounces beef broth (reduced sodium)
  • 8 slices dry French bread
  • 1 tablespoon Worcestershire sauce
  • ⅓ cup dry sherry
  • 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • 3 tablespoons butter
  • ¾ cup Gruyère cheese, shredded
  • ½ cup Emmental cheese, shredded
  • 6 tablespoons fresh Parmesan cheese, shredded
  • 1 clove garlic, minced

Instructions

  1. In a large non-stick pan, melt butter over medium-low heat. Add sliced onions and brown sugar. Cook, stirring occasionally, until onions are golden and caramelized, about 20 minutes.
  2. Place the caramelized onions into the slow cooker. Add beef broth, Worcestershire sauce, garlic, dry sherry, thyme, and bay leaf. Stir to combine.
  3. Cover and cook on low for 6-8 hours, allowing the flavors to meld and the soup to develop a rich taste.
  4. Preheat your broiler. Ladle the soup into oven-safe bowls. Top each bowl with a slice of dry French bread and a generous amount of Gruyère, Emmental, and Parmesan cheeses.
  5. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted, bubbly, and golden brown. Keep a close eye to avoid burning.
  6. Carefully remove from the oven and let cool slightly before serving.
