  • 1 (10.5-ounce) can French Onion Soup
  • 1 ½ cups uncooked rice
  • 3 cups beef broth
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded provolone cheese
  • 1 cup fried onions
  • 1 yellow onion, sliced
  • 1 (2-ounce) packet Lipton Onion Soup mix

Instructions

  1. Lightly coat the crockpot with cooking spray.
  2. Place the chicken breasts at the bottom of the crockpot. Add the sliced yellow onion, French Onion Soup, uncooked rice, beef broth, and Lipton Onion Soup mix. Stir gently to mix everything together.
  3. Cover and cook on low for 5-6 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
  4. Sprinkle the shredded mozzarella and provolone cheeses over the mixture. Top with fried onions. Cover and cook for an additional 15-20 minutes on high, or until the cheese is melted and bubbly.
  5. Gently stir before serving to combine the melted cheese with the rice and chicken.
