  • 8 hoagie buns
  • 5 pounds top or bottom round beef roast (boneless chuck roast)
  • 32 ounces beef broth
  • 1.4 ounces Italian dressing mix
  • 2 ounces au jus mix
  • 8 slices Provolone cheese

Instructions

  1. Spray the crockpot with nonstick spray.
  2. Place the beef roast into the crockpot.
  3. Sprinkle the Italian dressing mix and au jus mix evenly over the beef roast.
  4. Pour the beef broth over the seasoned beef.
  5. Cover the crockpot and cook on low for 6-8 hours or until the beef is fork-tender.
  6. Once cooked, remove the roast from the crockpot and strain the broth into a bowl to use as a dipping sauce.
  7. Thinly slice the roast beef.
  8. Assemble the sandwiches by placing the sliced beef and a slice of Provolone cheese on each hoagie bun.
  9. Wrap each sandwich in foil and place them in the oven at 400°F for about 10 minutes or until the cheese is melted and the sandwiches are heated through.
