3 lbs boneless skinless chicken thighs
1/4 cup Bourbon
1/4 cup soy sauce
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons cider vinegar
1/3 cup apple juice
1 1/2 tablespoons honey
1/2 teaspoon fresh grated ginger
4 cloves garlic, minced
1/2 teaspoon crushed red chili flakes
3 tablespoons cornstarch
1/4 cup water
1/4 cup sliced green onions
Salt and pepper to taste
Instructions
In a small bowl, combine the Bourbon, soy sauce, brown sugar, ketchup, cider vinegar, apple juice, honey, fresh grated ginger, minced garlic, and crushed red chili flakes. Mix well.
Place the chicken thighs in the slow cooker. Pour the prepared sauce over the chicken. Season with salt and pepper to taste.
Cover and cook on low for 6-7 hours or on high for 3 hours, until the chicken is tender and fully cooked.
Remove the chicken from the slow cooker and set aside. In a small bowl, create a slurry by mixing 3 tablespoons of water with the cornstarch. Turn the slow cooker to high. Stir the cornstarch slurry into the sauce. Cover and let it thicken for about 10 minutes, stirring occasionally.
Chop the cooked chicken into bite-sized pieces. Return the chicken to the slow cooker and stir into the thickened sauce. Add the sliced green onions and mix well.
