These Ciabatta Pizzas with Sticky Onions are a delightful and easy meal option. The crispy ciabatta serves as a perfect base, topped with sweet caramelized onions, melted mozzarella, and a touch of balsamic vinegar. Ideal for a quick lunch or a casual dinner, these pizzas are both flavorful and satisfying.

  • 2 ciabatta loaves, halved lengthways
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 200g mozzarella, torn into pieces
  • 4 tbsp tomato passata
  • 2 large red onions, thinly sliced
  • Fresh basil leaves, to garnish
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a frying pan over medium heat. Add the sliced red onions and cook for 15-20 minutes until they are soft and caramelized. Stir in the balsamic vinegar and cook for an additional 5 minutes until the onions are sticky and golden. Set aside.
  2. Preheat your oven to 200°C (180°C fan). Place the ciabatta halves cut-side up on a baking tray lined with parchment paper.
  3. Spread 1 tablespoon of tomato passata on each ciabatta half. Evenly distribute the caramelized onions over the ciabatta. Scatter the torn mozzarella pieces on top. Season with salt and pepper to taste.
  4. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the ciabatta is crispy.
  5. Garnish with fresh basil leaves before serving.
