4 chicken thighs, skin-on and bone-in
2 tbsp olive oil
1 onion, finely chopped
1 red bell pepper, sliced
2 garlic cloves, minced
2 tbsp sweet paprika
1 tsp smoked paprika (optional)
1 cup chicken broth
1 cup sour cream
1 tbsp all-purpose flour (optional)
Salt and pepper, to taste
Chopped fresh parsley, for garnish
Cooked egg noodles or rice, for serving
Instructions
Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Brown chicken thighs, skin-side down, until golden, about 5-7 minutes per side. Remove and set aside.
In the same skillet, sauté chopped onion and sliced red bell pepper until softened, about 5 minutes.
Add minced garlic, sweet paprika, and smoked paprika (if using). Stir well to coat vegetables in spices.
Pour in chicken broth and bring to a simmer. Return chicken thighs to the skillet, nestling them into the sauce. Cover and cook over low heat for 20-25 minutes, until chicken is cooked through and tender.
In a small bowl, mix sour cream with flour until smooth. Gradually stir sour cream mixture into the skillet. Cook for another 5 minutes, stirring gently, until sauce thickens slightly.
Taste and adjust seasoning with salt and pepper if needed. Serve Chicken Paprikash hot over cooked egg noodles or rice. Garnish with chopped fresh parsley.
