  • ¼ cup all-purpose flour for coating
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried oregano
  • 4 medium skinless, boneless chicken breast halves – pounded 1/4 inch thick
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 1 cup sliced mushrooms
  • ½ cup Marsala wine
  • ¼ cup cooking sherry

Instructions

  1. In a shallow dish, mix flour, salt, pepper, and oregano. Coat chicken pieces evenly in the flour mixture.
  2. In a large skillet, heat butter and olive oil over medium heat. Add chicken to the skillet and lightly brown on both sides.
  3. Turn chicken pieces over and add sliced mushrooms to the skillet. Pour in Marsala wine and cooking sherry.
  4. Cover the skillet and simmer for about 10 minutes, turning chicken once, until cooked through and no longer pink. Serve hot, spooning mushrooms and sauce over the chicken.
