  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro
  • 1 pound chicken breasts, cut into strips
  • 1 teaspoon paprika
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until no longer pink, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add sliced onion and bell peppers. Cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  5. Return the cooked chicken to the skillet and mix well with the vegetables.
  6. Transfer the chicken and vegetable mixture to a casserole dish. Spread sour cream evenly over the top.
  7. Sprinkle shredded cheddar and mozzarella cheeses over the sour cream layer.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro before serving.
