  • 4 cups shredded chicken
  • 4 cups cubed dried bread
  • 1 cup chopped onion
  • ⅓ cup chopped celery
  • 1 can cream of onion soup
  • 1 ½ cups chicken broth
  • 2 tablespoons butter
  • 1 teaspoon poultry seasoning
  • ½ teaspoon dried sage
  • Salt and pepper, to taste
  • ¼ cup unsalted butter (for gravy)
  • ¼ cup flour
  • 2 cups chicken broth (for gravy)
  • ¼ cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter. Add the chopped onion and celery, and sauté until tender.
  3. In a large mixing bowl, combine the cubed bread, shredded chicken, sautéed vegetables, cream of onion soup, poultry seasoning, dried sage, and 1 cup of chicken broth. Season with salt and pepper and stir until well mixed.
  4. Grease a 9 x 13-inch baking dish. Transfer the mixture into the dish and spread it evenly. Bake for 45 minutes, or until the top is golden brown.
  5. While the casserole is baking, prepare the gravy. In a skillet over medium heat, melt ¼ cup unsalted butter. Stir in the flour and cook, whisking constantly, until it begins to brown slightly.
  6. Gradually whisk in 2 cups of chicken broth, seasoning with salt and pepper. Simmer until the gravy thickens, then stir in the heavy cream and let it simmer for an additional 5 to 10 minutes.
  7. Pour the gravy over the baked casserole and serve.
