1 cup cassava flour
1/4 cup avocado oil (or olive oil)
1/4 cup tapioca flour
1/2 cup warm water
1/2 tsp sea salt
Instructions
In a large bowl, whisk together cassava flour, tapioca flour, and sea salt.
Stir in the avocado oil (or olive oil) until well blended.
Gradually add warm water, mixing continuously until a dough forms. Knead for 2-3 minutes until smooth and elastic.
Split the dough into 8 equal pieces, rolling each into a ball. Place each ball between two sheets of parchment paper or plastic wrap.
Use a rolling pin to flatten each ball into a round tortilla, about 1/8 inch thick.
Heat a non-stick skillet or griddle over medium-high heat. Peel off the top parchment or wrap layer from each tortilla and place it, paper side up, onto the skillet. Carefully remove the remaining parchment or wrap.
Cook each tortilla for 1-2 minutes on each side, or until lightly browned and bubbles start to form.
Transfer cooked tortillas to a clean kitchen towel to keep warm. Continue cooking the remaining tortillas.
