1 lb large shrimp, peeled and deveined
8 oz fettuccine or pasta of your choice
2 tablespoons olive oil
2 tablespoons Cajun seasoning
Salt and freshly ground black pepper
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Lemon wedges, for serving (optional)
Instructions
Cook the fettuccine or pasta according to package instructions until al dente. Drain and set aside.
Season the shrimp with Cajun seasoning, salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, stirring constantly, and bring to a simmer. Cook for 2-3 minutes until slightly thickened. Stir in the grated Parmesan cheese until melted and smooth.
Add the cooked pasta and cooked shrimp to the skillet. Toss gently to coat everything in the Alfredo sauce. Cook for another minute until heated through.
Remove from heat and sprinkle with chopped parsley. Serve hot with lemon wedges on the side for squeezing over, if desired.
