4 boneless pork chops
Salt and pepper to taste
1 tablespoon olive oil
1 can (8 ounces) pineapple slices, drained (reserve juice)
1/4 cup brown sugar
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon cornstarch
2 tablespoons water
Chopped fresh parsley for garnish (optional)
Instructions
Season both sides of the pork chops with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
In the same skillet, add pineapple slices and cook until lightly caramelized, about 1-2 minutes per side. Remove from the skillet and set aside.
In a small bowl, whisk together brown sugar, soy sauce, minced garlic, grated ginger, and 1/4 cup of the reserved pineapple juice.
Pour the brown sugar mixture into the skillet and bring to a simmer.
Return the pork chops and pineapple slices to the skillet, coating them with the sauce. Cook for 5-7 minutes, or until the pork chops are cooked through and the sauce has thickened.
In a separate small bowl, mix cornstarch with water to create a slurry. Stir the slurry into the skillet to further thicken the sauce, if desired.
Garnish with chopped fresh parsley before serving, if desired.
