A delicious and hearty beef enchilada bake layered with seasoned ground beef, chili beans, and melted cheddar cheese, all wrapped in corn tortillas. This comforting dish is perfect for family dinners and gatherings.

  • 1 bell pepper, chopped
  • 1 can chili beans, drained
  • 2 cups shredded cheddar cheese
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 can enchilada sauce
  • 10 corn tortillas
  • 1 can sliced black olives (optional)
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and bell pepper until the beef is browned and the vegetables are tender, about 8-10 minutes. Drain any excess fat.
  3. Stir in the chili beans, taco seasoning, and enchilada sauce until well combined. Simmer for 5 minutes to allow the flavors to meld.
  4. In a 9×13-inch baking dish, create layers starting with a layer of corn tortillas. Add a layer of the beef mixture, followed by a layer of shredded cheddar cheese. Repeat the layers until all ingredients are used, ending with a generous layer of cheese on top.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.
  6. Garnish with sliced black olives if desired. Let the casserole cool for 5 minutes before serving.
