Baked Fried Rice is a delicious and easy dish that combines cold cooked rice with a variety of vegetables and protein, all baked to perfection. This comforting meal is perfect for using up leftovers and can be customized with your favorite ingredients.

  • 3 cups cold cooked rice
  • 1 cup diced carrot
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 cup diced onion
  • 1 cup frozen peas
  • 2 cups cooked chicken, diced
  • 3 large eggs, lightly beaten
  • ¼ cup soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another minute.
  3. Add diced carrot to the skillet and cook until tender, about 5 minutes. Mix in frozen peas and cook for an additional 2 minutes.
  4. Push the vegetables to one side of the skillet. Add diced chicken to the empty side and cook until heated through.
  5. Pour beaten eggs into the empty side of the skillet and scramble until fully cooked.
  6. Add cold rice to the skillet, breaking up any clumps. Stir in soy sauce, oyster sauce (if using), and sesame oil. Mix well and season with salt and pepper to taste.
  7. Transfer the mixture to a baking dish and spread evenly. Bake in the preheated oven for 20-25 minutes or until the rice is heated through.
  8. Top with sliced green onions before serving.
