Baba Ganoush is a creamy and flavorful Middle Eastern dip made from roasted eggplants, tahini, and spices. This delightful appetizer is perfect for serving with pita bread, crackers, or fresh vegetables, making it a versatile addition to any gathering.

Ingredients

  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • 1/4 cup tahini
  • Salt, to taste
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 cup olive oil
  • 2 large eggplants

Instructions

  1. Preheat oven to 400°F (200°C). Prick eggplants with a fork and place them on a baking sheet. Roast for 30-40 minutes until charred and very soft, or char them directly over a gas burner.
  2. Once cooled, peel off the eggplant skin and discard. Place eggplant flesh in a food processor. Add tahini, garlic, lemon juice, olive oil, salt, cumin, and smoked paprika. Blend until smooth and creamy. Adjust seasoning to taste.
  3. Transfer Baba Ganoush to a serving bowl. Drizzle with olive oil and garnish with fresh parsley, sesame seeds, or pine nuts. Serve with pita bread, crackers, or fresh vegetables.
