4 bone-in, skin-on chicken thighs
4 chicken drumsticks
Salt and pepper, to taste
2 tbsp olive oil
1 cup tomato sauce
2 cups long-grain rice
4 cups chicken broth
1 tsp turmeric
1 tsp paprika
½ tsp saffron threads (optional)
1 onion, finely chopped
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 cup frozen peas
¼ cup chopped fresh parsley
Instructions
Season the chicken thighs and drumsticks with salt and pepper. Heat olive oil in a large skillet or paella pan over medium-high heat. Add chicken pieces, skin side down, and cook until golden brown, about 5-7 minutes per side. Remove chicken from the pan and set aside.
In the same pan, add chopped onion, red bell pepper, and green bell pepper. Sauté until softened, about 5 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
Stir in tomato sauce, rice, turmeric, paprika, and saffron (if using). Cook for 2-3 minutes, stirring frequently, to toast the rice slightly. Pour in chicken broth and bring to a boil. Reduce heat to low and nestle the browned chicken pieces into the rice. Cover and simmer for 25-30 minutes, or until rice is tender and chicken is cooked through.
About 5 minutes before cooking time is up, sprinkle frozen peas over the top. Continue cooking until peas are heated through.
Remove from heat and let sit, covered, for 5 minutes. Garnish with chopped fresh parsley before serving.
