  • 1 cup milk (for custard filling)
  • 3 egg yolks
  • 1/4 cup sugar (for custard filling)
  • 2 tablespoons cornstarch

Instructions

  1. Prepare Custard Filling: In a saucepan, heat 1 cup of milk over medium heat until steaming. In a bowl, whisk together 3 egg yolks, 1/4 cup sugar, 2 tablespoons cornstarch, and 1 teaspoon vanilla extract until smooth. Gradually whisk the hot milk into the egg mixture. Return to saucepan and cook over medium heat, stirring constantly, until thickened (about 5-7 minutes). Remove from heat, transfer to a bowl, cover with plastic wrap, and refrigerate until cold.
  2. Make Pancake Batter: In a bowl, whisk together 1 cup all-purpose flour, 1/2 cup sugar, 1 teaspoon baking powder, 2 large eggs, 1/2 cup milk, and 1/2 teaspoon vanilla extract until smooth.
  3. Cook Pancakes: Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown. Remove from pan and repeat with remaining batter.
  4. Assemble Dorayaki: Place one pancake flat-side up on a plate. Spread a generous amount of custard filling over the pancake. Top with another pancake, flat-side down, to sandwich the custard.
  5. Serve: Serve the Dorayaki warm or chilled.
