1 large egg yolk
1 cup unsalted butter, room temperature
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup fruit preserves or jam of choice
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter and granulated sugar until the mixture is light and fluffy.
Mix in the egg yolk and vanilla extract until well combined.
In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the butter mixture, mixing until just combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb to make an indentation in the center of each ball.
Fill each indentation with about 1/2 teaspoon of your chosen fruit preserves or jam.
Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
