  • 3 teaspoons minced garlic
  • 1 head lettuce
  • 1/4 cup chopped white onion
  • 1 can red beans (15 ounces)
  • 1 cob sweet corn, roasted
  • 1/2 cup guacamole
  • 2 ounces taco seasoning
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup chopped cucumber
  • 1 tablespoon chopped cilantro
  • 1/2 cup shredded cheddar cheese
  • 1.25 pounds lean ground beef
  • 1/2 cup sliced cherry tomatoes
  • 3/4 cup tomato puree
  • 2 tablespoons sliced red onions
  • 1 cup tortilla strips (optional)
  • 2 sliced limes (optional)

Instructions

  1. In a large bowl, mix the ground beef with taco seasoning.
  2. Heat a large nonstick pan over medium-high heat and add the olive oil. Add the seasoned beef, breaking it up with a large wooden spatula. Cook until browned, about 3 minutes per side.
  3. Add the chopped onion, minced garlic, and chopped cilantro to the pan. Stir in the tomato puree and mix to combine.
  4. Decrease heat to medium-low and cook for about 3-5 minutes, stirring occasionally until well combined and heated through.
  5. Start with a base of lettuce in each bowl. Layer with red beans, chopped cucumber, roasted sweet corn, sliced cherry tomatoes, and guacamole. Add the cooked ground beef on top.
  6. Sprinkle with shredded cheddar cheese and sliced red onions. Optionally, add tortilla strips and lime slices for extra crunch and zest.
  7. Serve immediately and enjoy!
