Stuffed jacket potatoes are a hearty and satisfying dish, perfect for a filling meal or a side. These potatoes are baked until tender and then filled with a savory mixture of crispy bacon, sautéed vegetables, and melted cheddar cheese, topped with fresh herbs and served with sour cream.

  • 4 large baking potatoes
  • 200g grated cheddar cheese
  • 1 tbsp olive oil
  • 200g bacon, chopped
  • 200g mushrooms, sliced
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • Salt and pepper, to taste
  • Fresh parsley or chives, chopped, for garnish
  • Sour cream, to serve

Instructions

  1. Preheat your oven to 200°C (180°C fan). Scrub the potatoes clean, prick them with a fork, rub with olive oil, and bake for 45-60 minutes until tender.
  2. In a frying pan, cook the bacon until crispy. Remove and set aside. In the same pan, sauté onion and red bell pepper for 5 minutes, then add mushrooms and cook for another 5 minutes. Season with salt and pepper.
  3. Remove baked potatoes from the oven, slice lengthwise, and fluff the insides. Spoon the vegetable mixture and bacon into each potato.
  4. Sprinkle grated cheddar cheese over each stuffed potato and return to the oven for 5-10 minutes until the cheese is melted.
  5. Garnish with chopped parsley or chives and serve hot with sour cream.
