1 pack of rice noodles (bihon)
1 pound chicken breast or thighs, cut into bite-sized pieces
2 tablespoons vegetable oil
1 onion, sliced
2 cloves garlic, minced
2 carrots, julienned
1/2 head cabbage, chopped
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 cup snow peas
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 cup chicken broth
Salt and pepper to taste
Green onions, chopped, for garnish
Lemon wedges, for serving
Instructions
Soak the rice noodles in warm water for 10-15 minutes until softened. Drain and set aside.
Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken pieces and cook until golden brown and fully cooked. Remove from pan and set aside.
In the same pan, add a bit more oil if needed. Sauté onion and garlic until translucent and fragrant. Add carrots, cabbage, bell peppers, and snow peas. Stir-fry until vegetables are tender-crisp.
Return cooked chicken to the pan with vegetables. Add softened rice noodles, soy sauce, oyster sauce, and chicken broth. Toss everything together until noodles are coated with sauce and ingredients are well mixed. Cook for 2-3 minutes to heat through.
Season with salt and pepper to taste. Garnish with chopped green onions.
