1 whole chicken (4–5 lbs)
1 tablespoon butter
1 cup chicken broth
1 lemon, halved
4 cloves garlic, smashed
2 tablespoons olive oil
1/2 cup white wine (optional)
Fresh herbs (rosemary, thyme, parsley)
1 onion, quartered
Salt and black pepper, to taste
Instructions
Preheat your oven to 375°F (190°C).
Season the chicken cavity with salt and pepper. Stuff the cavity with onion, lemon, garlic, and fresh herbs.
Heat olive oil in a Dutch oven over medium-high heat. Brown the chicken on all sides until golden.
Add chicken broth and white wine (if using) to the Dutch oven. Cover with the lid and transfer to the oven.
Roast for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Baste the chicken with the juices halfway through cooking.
Remove the chicken from the Dutch oven and let it rest for 10 minutes. Melt butter in the Dutch oven with the remaining pan juices.
Serve the chicken with the sauce from the Dutch oven.
