Do Nothing Cake is a moist and flavorful dessert that combines the sweetness of crushed pineapple with a rich frosting made from butter, sugar, and coconut. It’s easy to prepare and perfect for gatherings, offering a delightful treat that requires minimal effort.

  • 1 teaspoon baking soda
  • 2 cups granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 2 eggs, slightly beaten
  • 1 large can (20 ounces) crushed pineapple with juice
  • 1 cup sugar (for frosting)
  • 1 stick (1/2 cup) butter
  • 1 can (5 1/2 ounces) evaporated milk
  • 1 cup shredded coconut
  • 1 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 13×9-inch baking dish and set aside.
  2. In a large bowl, whisk together the flour, baking soda, sugar, and salt. Add the vanilla extract, beaten eggs, and crushed pineapple with juice. Mix until just combined.
  3. Pour the batter into the prepared baking dish. Bake for 30-40 minutes or until a wooden toothpick inserted into the center comes out clean.
  4. While the cake is baking, in a small saucepan, combine the butter, sugar, and evaporated milk. Heat until boiling, then cook and stir for about 5 minutes, or until slightly thickened. Remove from heat and stir in the shredded coconut and chopped nuts.
  5. Once the cake is done, remove it from the oven. Poke holes all over the cake and pour the hot frosting over it, spreading it out for even coverage.
  6. Allow the cake to cool slightly before cutting.
