Cashew Chicken is a delightful dish featuring tender chicken breast coated in a savory sauce, complemented by crunchy cashews. This quick and easy recipe is perfect for a weeknight dinner, served over rice or with steamed vegetables for a satisfying meal.

  • 1 ½ pounds chicken breast
  • ¼ cup soy sauce
  • ½ cup chicken broth
  • 2 tbsp garlic, minced
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • ¼ cup cornstarch
  • 2 tbsp olive oil
  • 1 cup cashews, whole

Instructions

  1. In a medium bowl, whisk together the soy sauce, chicken broth, minced garlic, brown sugar, oyster sauce, and sesame oil until well combined. Set aside to let the flavors meld.
  2. Cut the chicken breasts into one-inch cubes and season with salt and pepper to taste. Place the seasoned chicken in a gallon-size freezer bag. Add the cornstarch to the bag, seal the top, and shake until all pieces are evenly coated.
  3. Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the coated chicken in batches to avoid crowding the pan. Cook until the chicken is browned and cooked through.
  4. Once the chicken is cooked, add the cashews to the pan and toast for about a minute, stirring frequently.
  5. Pour the prepared sauce into the pan with the chicken and cashews. Toss to coat everything evenly. The sauce will thicken as it heats.
  6. Serve the Cashew Chicken over rice and/or with your favorite steamed vegetables.
