  • 1 oz French vanilla pudding mix
  • 1 box (15 ¼ oz) white cake mix
  • ½ cup vegetable oil
  • 4 large eggs
  • 3 oz orange Jello
  • 1 cup cold milk
  • ½ cup orange juice
  • 1 cup shredded coconut
  • 8 oz whipped topping
  • 20 oz can crushed pineapples, drained
  • 1½ cups white sugar
  • 1 cup sour cream
  • ½ cup finely chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the cake mix, pudding mix, orange Jello, milk, orange juice, vegetable oil, and eggs. Beat on medium speed until the batter is smooth and well combined.
  3. Pour the batter evenly into the prepared cake pans.
  4. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. In a large bowl, mix the whipped topping, sour cream, and sugar until smooth.
  7. Fold in the drained crushed pineapples and shredded coconut. If using, add the finely chopped pecans.
  8. Place one cake layer on a serving plate and spread a generous amount of frosting on top.
  9. Place the second cake layer on top of the first and frost the top and sides of the cake.
  10. Garnish with additional shredded coconut or pecans if desired.
