  • 2 onions, thinly sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup water
  • 2 tablespoons vegetable oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the thinly sliced onions and cook until they are softened and golden brown, about 8-10 minutes.
  2. Stir in cumin seeds, mustard seeds, turmeric powder, ground coriander, ground cumin, chili powder, garam masala, and salt. Cook for an additional 2-3 minutes until the spices are fragrant.
  3. Add the chopped tomatoes, green bell pepper, and red bell pepper. Cook for 5-7 minutes until the vegetables are softened.
  4. Add the chicken pieces to the skillet. Cook until the chicken is browned on all sides, about 5-7 minutes.
  5. Pour in 1/2 cup of water and stir well. Bring to a simmer, then reduce the heat to low. Cover and cook for 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender.
  6. Garnish with chopped fresh cilantro. Serve hot with rice or naan.
