1 (14.75 ounce) can salmon, drained and flaked
1 egg, lightly beaten
1/4 cup mayonnaise
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup finely chopped green bell pepper
1/2 cup breadcrumbs
1/4 teaspoon dried dill weed
Salt and pepper, to taste
1/4 cup vegetable oil, for frying
Instructions
In a large bowl, combine flaked salmon, lightly beaten egg, mayonnaise, chopped onion, chopped celery, chopped green bell pepper, breadcrumbs, dried dill weed, salt, and pepper. Mix thoroughly.
Shape the mixture into patties of desired size. Place them on a parchment-lined plate or baking sheet.
Heat vegetable oil in a large skillet over medium-high heat.
Carefully place salmon patties in the hot oil, working in batches if needed. Fry for 4-5 minutes on each side until golden brown and heated through.
Remove salmon cakes from skillet and drain excess oil on paper towels.
Serve hot, optionally with tartar sauce or lemon wedges on the side.
