600g lamb chops
2 cups basmati rice, soaked and drained
2 tsp Turkish pepper flakes
2 tsp date molasses
2 tbsp olive oil
1 aubergine, sliced
2 onions, sliced
2 potatoes, sliced
3 tomatoes, sliced
Instructions
Marinate lamb chops with Turkish pepper flakes and date molasses.
Bake aubergine, onions, and potatoes separately until tender.
In a large pot, layer baked vegetables, marinated lamb chops, and soaked basmati rice. Add water to cover the ingredients. Cook covered over low heat for 1.5 hours until rice is tender and lamb is cooked through.
Carefully flip the pot onto a serving plate to reveal the layered Maqlooba.
