1 and 1/2 pounds potatoes, cubed
4 slices bacon, cooked and crumbled
1 small onion, diced or sliced
2 cloves garlic, chopped
1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon grainy mustard
1 tablespoon sugar (optional)
Salt and pepper to taste
1 tablespoon parsley, chopped (optional)
Instructions
Cover the cubed potatoes with water in a large pot. Bring to a boil and cook until just tender, about 10 minutes. Drain and set aside.
In a large pan, cook the bacon until crispy. Remove and crumble, reserving 2 tablespoons of the bacon grease in the pan.
Add the diced onion to the pan with the bacon grease. Cook over medium heat until tender, about 5 minutes.
Stir in the chopped garlic and cook until fragrant, about 1 minute.
Pour in the apple cider vinegar, Dijon mustard, grainy mustard, and sugar (if using). Mix well and season with salt and pepper to taste. Turn off the heat.
Add the cooked potatoes and crumbled bacon to the pan. Toss to coat evenly with the dressing. If using, sprinkle with chopped parsley.
