  • 1 dried guajillo chili
  • 2 bay leaves
  • 2 lbs beef chuck roast, cut into chunks
  • 4 cloves garlic
  • 1 teaspoon dried oregano
  • 1 dried chipotle chili
  • 1 onion, quartered
  • Salt and pepper to taste
  • 1 dried ancho chili
  • 4 cups beef broth
  • 1 cinnamon stick
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Corn tortillas
  • Chopped cilantro
  • Diced onions
  • Lime wedges

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a dry skillet over medium heat, toast the dried chilies for a few minutes until fragrant. Remove the stems and seeds, then soak them in hot water for about 15 minutes until softened.
  3. In a blender, combine the soaked chilies, quartered onion, garlic, dried oregano, ground cumin, and smoked paprika. Blend until smooth.
  4. Season the beef chunks with salt and pepper, then brown them in a large Dutch oven over medium-high heat.
  5. Pour the chili mixture over the beef, then add the bay leaves, cinnamon stick, and beef broth. Bring to a simmer.
  6. Cover the Dutch oven and transfer it to the preheated oven. Cook for 3-4 hours, or until the beef is tender and shreds easily.
  7. Remove the beef from the broth and shred it with two forks. Reserve the broth.
  8. In a skillet over medium heat, dip each tortilla in the reserved broth, then cook until slightly crispy. Fill with shredded beef, chopped cilantro, and diced onions.
  9. Serve the tacos with lime wedges on the side.
