  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar (for topping)
  • 1 tablespoon cornstarch
  • 1 cup boiling water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, mix sliced peaches with 1/2 cup sugar and cinnamon. Spread this mixture evenly in the bottom of the prepared baking dish.
  3. In another bowl, combine flour, 1 cup sugar, baking powder, and salt. Stir in milk and melted butter until just combined. Pour the batter over the peaches, spreading evenly.
  4. In a small bowl, mix 1 cup sugar with cornstarch. Sprinkle this mixture evenly over the batter. Carefully pour boiling water over the top, and then drizzle with vanilla extract. Do not stir.
  5. Bake for 45-50 minutes, or until the pudding is set and golden brown on top.
  6. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
