  • 6 tablespoons unsalted butter, melted
  • 1 cup heavy cream
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 3/4 cup orange juice concentrate
  • 1 teaspoon orange zest (optional)
  • 1 package (3 ounces) orange-flavored gelatin dessert mix
  • 1 cup boiling water
  • 1/2 cup cold water

Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate the crust while preparing the fillings.
  2. Bloom the gelatin in 3 tablespoons cold water and let sit for 5-10 minutes. Whip 1 cup of heavy cream to stiff peaks. In a separate bowl, beat together the cream cheese, powdered sugar, orange juice concentrate, and orange zest until smooth. Melt the bloomed gelatin and add it to the orange cream cheese mixture while beating continuously. Fold in the whipped cream and pour over the crust. Refrigerate until set, about 1-2 hours.
  3. Bloom the gelatin by sprinkling it over 3 tablespoons cold water in a small bowl. Let it sit for 5-10 minutes. Whip 1 cup of heavy cream to stiff peaks. Beat the cream cheese with powdered sugar and vanilla extract until smooth. Melt the bloomed gelatin and slowly pour into the cream cheese mixture while beating continuously. Fold in the whipped cream and spread over the set orange layer. Refrigerate until firm, typically 2-3 hours.
  4. Dissolve the orange-flavored gelatin mix in 1 cup boiling water, stirring until fully dissolved. Add 1/2 cup cold water and allow to cool to room temperature. Once the orange cream cheese layer is set, pour the gelatin over the top. Refrigerate for several hours or overnight.
  5. Run a knife along the edge of the cheesecake before unhinging the springform pan. Slice with a warm, clean knife, cleaning between cuts for neat slices. Garnish as desired.
