500g floury potatoes
140g salmon
1 bay leaf
300g smoked haddock or cod
50g mature Cheddar cheese, grated
100g fresh breadcrumbs
1 tbsp plain flour
3 tbsp flour
1 tbsp butter
2 eggs, beaten
300ml milk
1 tsp Dijon mustard
Nutmeg (to taste)
Parsley, chopped
1 lemon, zested
Vegetable oil (for frying)
Mixed green salad (for serving)
Instructions
In a small saucepan, melt 1 tbsp butter over medium heat. Stir in 1 tbsp plain flour and cook for 1 minute. Gradually whisk in 300ml milk and cook until thickened. Remove from heat, stir in 50g grated Cheddar cheese and 1 tsp Dijon mustard, and let it cool. Freeze the sauce in small portions.
Peel and dice 500g floury potatoes. Place them in a pot with a bay leaf and cover with cold water. Bring to a boil, then simmer until tender. Drain, remove the bay leaf, and mash with a pinch of nutmeg.
In a separate pot, poach 300g smoked haddock or cod and 140g salmon in lightly salted water until cooked through. Flake the fish and remove any bones.
Mix the flaked fish into the mashed potatoes along with 1 tbsp chopped parsley and the zest of 1 lemon. Stir until well combined.
Form the mixture into patties. Place a small dollop of the frozen Mornay sauce in the center of each patty, then shape the fishcakes around the filling, sealing the edges.
Dredge each fishcake in 3 tbsp flour, then dip into beaten eggs, and coat with fresh breadcrumbs.
Heat vegetable oil in a pan over medium heat. Fry the fishcakes until golden and crisp, about 3-4 minutes per side. Alternatively, for a lighter option, bake them at 400°F (200°C) for 20 minutes, flipping halfway through.
