3/4 cup all-purpose flour
3/4 cup cream cheese, softened
1 stick salted butter, softened
2 eggs
3 tablespoons lemon juice
3–4 drops yellow food coloring (optional)
1 cup powdered sugar
2–3 tablespoons lemon juice for icing
Yellow sprinkles (optional)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly spray the sides with non-stick cooking spray.
In a large mixing bowl, blend the sugar and flour until well mixed.
Add the softened butter and cream cheese to the bowl, mixing until the mixture is creamy and smooth.
Beat in the eggs, lemon juice, and optional yellow food coloring. Mix until everything is evenly incorporated.
Pour the batter into the prepared baking pan, spreading it evenly with a spatula. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Allow the brownies to cool in the pan for about 30 minutes.
While the brownies are cooling, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice if needed.
Once the brownies are cool, spread the icing over the top. Garnish with yellow sprinkles if desired.
