This Lemon Blueberry Cake is a delightful combination of fresh blueberries and zesty lemon, creating a moist and flavorful dessert. Perfect for any occasion, it features a light and fluffy texture that pairs wonderfully with a dusting of powdered sugar.

  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup sour cream
  • ½ cup light olive oil
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 16 oz fresh blueberries
  • 1 medium lemon (zest and juice)
  • ½ Tbsp cornstarch
  • Powdered sugar (optional)

Instructions

  1. Lightly butter a 9-inch springform pan and line the bottom with parchment paper. Preheat the oven to 375˚F (190˚C).
  2. In a large bowl, beat the eggs and granulated sugar using a whisk attachment on high speed for 5 minutes, until the mixture is light and thick. Add the sour cream, oil, vanilla extract, and salt. Mix on low speed until well combined.
  3. In a medium bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients in thirds, mixing until just combined after each addition. Stir in 1 tablespoon of lemon juice and ½ tablespoon of lemon zest.
  4. Rinse and drain the blueberries thoroughly. In a medium bowl, toss the blueberries with cornstarch and 1 teaspoon of lemon juice until well coated.
  5. Pour half of the batter into the prepared springform pan and spread evenly. Sprinkle half of the blueberries over the batter. Spread the remaining batter over the blueberries and top with the remaining blueberries, gently pressing them into the batter.
  6. Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 15-20 minutes, then remove the ring and cool completely.
  7. Dust with powdered sugar before serving, if desired.
