  • 10 tbsp unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 2 cups Fruity Pebbles cereal, divided
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 8 large marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, sugar, and 1/2 cup of Fruity Pebbles until light and fluffy. Mix in the egg and vanilla extract.
  3. Stir in the flour, baking soda, and salt until well combined. Fold in 1 cup of Fruity Pebbles.
  4. Scoop out 3-4 tablespoons of dough, flatten into a disc, and place a marshmallow in the center. Enclose the marshmallow with the dough.
  5. Roll the dough balls in the remaining 1/2 cup of Fruity Pebbles until coated.
  6. Place the cookies on the prepared baking sheet, spacing them 3 inches apart. Bake in the preheated oven for 8-11 minutes, until the edges are set and the marshmallow starts to seep through cracks.
  7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
