  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn
  • 1 cup cornmeal
  • 1/2 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1 teaspoon baking powder
  • Salt and black pepper to taste
  • Optional: Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or casserole dish.
  2. In a mixing bowl, combine the whole kernel corn (drained), cream-style corn, cornmeal, sour cream, melted butter, shredded cheddar cheese, beaten eggs, baking powder, salt, and black pepper. Mix well until thoroughly combined.
  3. Pour the mixture into the prepared baking dish, spreading it evenly.
  4. Bake in the preheated oven for 45-50 minutes or until the casserole is set and the top turns golden brown.
  5. Once done, remove the Corn Casserole from the oven and let it cool for a few minutes.
  6. Garnish with chopped fresh parsley if desired, then serve warm.
