  • 6 ounces cream cheese, room temperature
  • 4 tablespoons butter, room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F. Spray a 10×15" pan with non-stick spray.
  2. In a bowl, combine flour, baking powder, cinnamon, and salt. Set aside.
  3. In a large bowl, beat eggs until frothy and dark yellow. Gradually add sugar, oil, and vanilla extract, beating until well combined.
  4. Stir the dry ingredients into the egg mixture until just blended. Fold in shredded carrots.
  5. Spread the batter evenly into the prepared pan. Bake for 9-11 minutes until set and lightly golden.
  6. While the cake is baking, lay a clean kitchen towel on a work surface and dust liberally with powdered sugar. Once baked, immediately invert the cake onto the towel. Remove the pan and gently peel off the foil.
  7. Starting at the short end, roll the cake tightly with the towel. Let it cool completely in this rolled position, about 1 hour.
  8. In a bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
  9. Carefully unroll the cooled cake. Spread the cream cheese filling evenly over the surface. Re-roll the cake tightly without the towel.
  10. Chill the cake until the filling firms up slightly. Dust with powdered sugar, then slice and serve.
