This delightful Blueberry Basil Bruschetta combines the sweetness of roasted blueberries with the creaminess of ricotta cheese, all atop toasted French bread. Finished with fresh basil and a drizzle of balsamic glaze, it’s a perfect appetizer for any occasion.

  • 11/2 cups fresh or frozen blueberries (thawed if frozen)
  • 2 tablespoons honey or agave nectar
  • 1 tablespoon lemon juice
  • 8 slices French bread
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup ricotta cheese (regular or low-fat)
  • 1/4 cup minced fresh basil

Instructions

  1. Preheat the oven to 400°F. Line a medium sheet pan with parchment paper. In a bowl, combine the blueberries with honey and lemon juice.
  2. Spread the blueberries evenly on the prepared sheet pan. Roast for 10-15 minutes until slightly bursting and juicy. Set aside.
  3. Place the French bread slices on a large baking sheet. Lightly brush both sides with olive oil. Broil under high heat for 1-2 minutes until lightly toasted, then flip and broil for an additional 1-2 minutes.
  4. Spread a small amount of ricotta cheese onto each toasted bread slice. Top with roasted blueberries and minced basil.
  5. Drizzle each bruschetta with a little balsamic glaze. Serve immediately while warm.
