  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 1/2 cups apple cider
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, melted (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 1/2 cup granulated sugar (for coating)

Instructions

  1. In a small saucepan, simmer the apple cider over medium heat until reduced to 1/2 cup. Set aside to cool.
  2. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  3. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, and salt.
  4. In a large bowl, beat the butter and 1 cup of granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and reduced apple cider.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture.
  6. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Brush the top of the cooled bread with melted butter. In a small bowl, mix together the 1/2 cup granulated sugar and cinnamon. Sprinkle over the top of the bread.
