Birria Taquitos are a delicious Mexican dish featuring crispy corn tortillas filled with tender, shredded beef that has been simmered in a rich and flavorful broth. These taquitos are perfect for dipping and are often garnished with fresh cilantro and diced onions, making them a delightful treat for any occasion.

Ingredients

  • 4 dried ancho chiles, seeds removed
  • 1 tsp dried oregano
  • 1 onion, chopped
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 lbs beef chuck roast, cut into chunks
  • 4 cloves garlic
  • 4 dried guajillo chiles, seeds removed
  • 1 tsp cumin
  • 1/2 tsp ground cloves
  • 2 tbsp apple cider vinegar
  • 4 cups beef broth
  • Cooking oil for frying
  • Corn tortillas
  • 1 cup chopped cilantro
  • 1 cup diced onions

Instructions

  1. In a large pot, combine beef chunks, guajillo chiles, ancho chiles, chopped onion, garlic cloves, cumin, oregano, ground cloves, bay leaves, salt, pepper, apple cider vinegar, and beef broth. Bring to a boil, then simmer covered for 3-4 hours until the beef is tender.
  2. Remove beef from the pot and shred with forks. Strain the broth and reserve for dipping.
  3. Warm corn tortillas on a skillet. Fill each tortilla with shredded beef and fold tightly into taquito shape.
  4. In a deep skillet, heat cooking oil over medium-high heat. Fry taquitos until golden and crispy. Drain excess oil on paper towels.
  5. Garnish taquitos with chopped cilantro and diced onions. Serve with a side of reserved broth for dipping.
