  • 1 small zucchini, sliced into 1/8 to 1/4 inch rounds
  • 1 small yellow squash, sliced into 1/8 to 1/4 inch rounds
  • 2 tablespoons butter
  • ½ cup heavy cream
  • 1 cup shredded smoked gouda
  • ½ onion, thinly sliced
  • 2 large cloves garlic, minced
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In an oven-proof skillet, melt the butter over medium heat. Add the thinly sliced onion and cook until edges begin to brown, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the heavy cream and let it simmer until it starts to bubble and thicken. Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  4. Mix in the zucchini and yellow squash. Cook for another 4-5 minutes, allowing the vegetables to start softening.
  5. Sprinkle the shredded smoked gouda evenly over the top. Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is golden brown and bubbly.
