2 cups cubed, cooked chicken meat
½ cup butter
9 lasagna noodles
1 cup grated Parmesan cheese, divided
1 teaspoon dried oregano
1 onion, chopped
2 (10 oz) packages frozen chopped spinach, thawed and drained
2 cups ricotta cheese
1 teaspoon dried basil
½ cup all-purpose flour
4 cups shredded mozzarella cheese, divided
1 clove garlic, minced
1 teaspoon salt
2 cups chicken broth
1½ cups milk
½ teaspoon ground black pepper
1 tablespoon chopped fresh parsley
Instructions
Preheat oven to 350°F. Cook lasagna noodles according to package instructions, drain, and set aside.
In a large skillet, melt butter over medium heat. Sauté chopped onion and minced garlic until tender. Stir in flour and cook until lightly browned. Gradually whisk in chicken broth and milk. Add salt, black pepper, dried basil, and oregano. Stir in 2 cups shredded mozzarella and ¼ cup grated Parmesan until melted and smooth.
In a 9×13-inch baking dish, spread a thin layer of the sauce. Place 3 lasagna noodles over the sauce. Spread one-third of the ricotta cheese over the noodles. Add one-third of the cubed chicken and half of the thawed spinach. Sprinkle with one-third of the remaining mozzarella and Parmesan cheese. Repeat layers, ending with a layer of sauce and remaining cheese on top.
Cover with aluminum foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden. Let stand for 10 minutes before serving. Garnish with chopped fresh parsley.
