  • 1 1/2 pounds chicken breast, cut into strips
  • 1/2 cup coconut milk
  • 1 tablespoon curry powder
  • 1 garlic clove, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Bamboo skewers, soaked in water for 30 minutes
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1/2 teaspoon chili flakes
  • 1 garlic clove, minced
  • Water, as needed to thin

Instructions

  1. In a bowl, whisk together coconut milk, curry powder, garlic, ginger, soy sauce, and brown sugar. Add chicken strips and marinate for at least 1 hour, preferably overnight.
  2. Preheat grill to medium-high heat. Thread chicken onto skewers.
  3. Grill skewers for 5-7 minutes on each side, or until fully cooked.
  4. For the peanut sauce, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili flakes, and garlic in a saucepan over medium heat. Add water as needed to reach desired consistency. Cook for 5 minutes, stirring frequently.
  5. Serve skewers with peanut sauce on the side.
