1 1/2 pounds chicken breast, cut into strips
1/2 cup coconut milk
1 tablespoon curry powder
1 garlic clove, minced
1 teaspoon ginger, grated
1 tablespoon soy sauce
1 tablespoon brown sugar
Bamboo skewers, soaked in water for 30 minutes
1/2 cup peanut butter
1/4 cup coconut milk
1 tablespoon soy sauce
1 tablespoon lime juice
1 teaspoon brown sugar
1/2 teaspoon chili flakes
1 garlic clove, minced
Water, as needed to thin
Instructions
In a bowl, whisk together coconut milk, curry powder, garlic, ginger, soy sauce, and brown sugar. Add chicken strips and marinate for at least 1 hour, preferably overnight.
Preheat grill to medium-high heat. Thread chicken onto skewers.
Grill skewers for 5-7 minutes on each side, or until fully cooked.
For the peanut sauce, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili flakes, and garlic in a saucepan over medium heat. Add water as needed to reach desired consistency. Cook for 5 minutes, stirring frequently.
