1 cup salsa
4 baked potatoes
1 pound ground beef
2 tablespoons taco seasoning
2 cloves garlic, minced
1/2 cup water
1/2 of a medium onion, diced
Salt and pepper to taste
Shredded cheese
Green onions
Sour cream

Instructions
Prepare the baked potatoes and set them aside to cool for at least 10 minutes.
While the potatoes cool, heat a large skillet over medium heat. Add the ground beef, diced onion, and minced garlic. Season with salt and pepper. Cook until the beef is no longer pink, breaking it up with a spatula. Drain any excess fat.
Add the taco seasoning, water, and salsa to the cooked beef mixture. Stir to combine and bring to a simmer over medium heat. Cover and reduce the heat to low. Let simmer for 15 minutes. If the mixture is too liquid, simmer with the lid off to reduce.
Gently slice open each baked potato lengthwise and squeeze the sides to open without breaking them completely.
Season the inside of each potato with salt and pepper, and mash slightly with a bit of sour cream.
Divide the taco meat evenly among the potatoes. Top with freshly shredded cheese, chopped green onions, diced tomatoes, or any of your favorite taco toppings.
