Taco Salad Cups are a delicious and fun way to enjoy a classic taco salad in a crispy tortilla shell. These bite-sized cups are filled with seasoned ground beef, fresh vegetables, and topped with creamy sour cream and zesty salsa, making them perfect for parties or a quick weeknight dinner.

  • 1/4 cup cilantro, chopped
  • 1 pound ground beef
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1 packet taco seasoning
  • 1 cup iceberg lettuce, shredded
  • Sour cream, for serving
  • Salsa, for serving
  • 1/2 cup cheddar cheese, shredded
  • 12 small flour tortillas

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly brush each tortilla with olive oil. Press the tortillas into a muffin tin to form cups. Bake for 10-12 minutes until crisp.
  2. While the tortillas bake, brown the ground beef in a skillet over medium heat. Drain excess fat and stir in taco seasoning.
  3. In each taco cup, layer ground beef, lettuce, cherry tomatoes, cheddar cheese, red onion, and avocado.
  4. Top each cup with a dollop of sour cream and a spoonful of salsa. Garnish with chopped cilantro.
