Ingredients

Scale
  • 1 lb ground beef
  • 2 cups shredded cheddar cheese
  • 1 (10-oz) can diced tomatoes and green chiles, undrained
  • 1 (8-oz) bottle ranch dressing
  • 1 (1-oz) package taco seasoning
  • 5 (15-count) frozen phyllo tart shells

Instructions

  1. Preheat your oven to 350ºF.
  2. In a skillet over medium heat, cook the ground beef until it is no longer pink. Drain any excess fat.
  3. Add the taco seasoning and the can of diced tomatoes and green chiles (including the liquid) to the cooked ground beef. Stir well and cook for an additional 5 minutes. Remove from heat and let it cool slightly.
  4. In a large mixing bowl, combine the shredded cheddar cheese and ranch dressing.
  5. Add the slightly cooled taco meat mixture to the bowl with the cheese and ranch dressing. Mix until well combined.
  6. Spoon the mixture into the frozen phyllo tart shells, filling each shell evenly.
  7. Place the filled tart shells on a baking sheet and bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly. If baking from frozen, add an additional 2-3 minutes to the baking time.
  8. Once baked, remove the Taco Ranch Bites from the oven and let them cool slightly before serving.
